From the kitchen of Martin Odeu
Why a Michelin star chef threw out every coated pan he owned
Fifteen years in Michelin kitchens. Martin has cooked on everything. Cast iron, stainless, ceramic, copper, every coating on the market. Today he uses one pan. Here's why.
In Martin's own words
Six reasons he cooks on titanium
-

Bare hammered titanium. No layer on top of it. 01There's nothing in it to end up in your food
Every coated pan I've owned failed the same way. First a scratch, then a blister, then little flakes that go somewhere. And somewhere is dinner. Titanium has nothing to break down, because there's nothing sitting on top of it. It's solid metal all the way through, and it cooks the same on day one thousand as it did on day one.
-

One piece of metal. Nowhere for a chemical to hide. 02PFAS free, and I mean the whole pan
The forever chemicals are in most pans sold as safe. They build up in the body and they don't leave. Europe is already moving to ban them. I won't cook with them in my restaurant, so I'm certainly not doing it at home. No PFAS, no PTFE, no PFOA. Nothing hidden under the surface, because there's no surface to hide under.
-
Preheat, a little fat, and the egg slides. 03Food lets go without a chemical doing it for you
The hammered texture does what a good professional pan has always done. Eggs slide. Fish lifts away whole. You preheat, you use a little fat, and the metal takes it from there. That isn't a coating doing the work. That's cooking.
-
The bench wears out before the pan does. 04You buy this pan once
A nonstick pan gives you one to three years, then you replace it and start again. Titanium doesn't wear out, because there's nothing to wear away. After fifteen years in professional kitchens I know what survives. This does. There's a 25 year warranty on it, and I doubt most people will ever need to use it.
-
Gas, induction, oven, open flame. 05One pan, every hob, every dish
Induction, gas, oven, open flame. Oven safe to 260 degrees, dishwasher safe, and half the weight of cast iron. In a working kitchen you need a pan that doesn't flinch. At home, with a family to feed, that matters even more.
-

Martin at the prep counter, before service. 06And right now it’s more than half off
No coating, no chemical, no compromise. I didn’t put my name on this company to sell someone else’s pan. This is the one I reach for when I cook for my own family. Every pan is made in small batches, and since people started sharing them online they go fast.
There's nothing under the surface. That's the whole idea.

Details
Solid titanium, hammered for extra strength. There’s no coating, so there’s nothing to wear off. Works on gas, electric, ceramic and induction, and goes in the oven up to 260°C. Dishwasher and metal utensil safe.
The 26 cm pan weighs about 1.1 kg.
Why Martin chose titanium
No coating, no PFAS. You cook on titanium, so there’s nothing to wear off.
Food lets go with a little oil. The hammered surface sears beautifully and releases clean.
Built for life. One pan, backed by a 25 year warranty.
Shipping, returns & warranty
Free shipping, shipped in 1 to 3 working days.

Caring for your pan
Martin’s tip: warm your pan over medium heat first, then add a little oil or butter. Titanium holds heat really well, so you’ll rarely need high heat.
Wash it with warm soapy water, or just pop it in the dishwasher.

From the chef
I made this pan the way I'd want to use it myself. Without compromise.

Eggs actually slide
I was sceptical without a coating, but you warm it up, add a bit of butter and the omelette comes out in one piece. Three months in and it still looks new.

The last pan I’ll buy
We went through two nonstick pans in four years. This one handles the metal spatula, goes in the oven and comes out of the dishwasher looking the same. Heavier than I expected, in a good way.

Give it a week
It cooks differently from a coated pan, you really do need to warm it up first. Once I got that right my steaks got better than they have ever been. I should have bought the set straight away.

Who is Martin Odeu?
A French chef with one Michelin star. With Chez Martin, he's bringing the tools from his kitchen into yours, at a price that works for home cooks.
How is this different from a nonstick pan?
A nonstick pan relies on a coating, and coatings wear out. Ours doesn't have one. You cook straight on titanium, so there's nothing to lose over time.
Is it safe to cook with?
There's no coating, so nothing can flake into your food. The pan is made without PFAS and PTFE.
Will food really not stick?
Titanium isn't a coating, so it takes a little technique. Martin's tip: preheat over medium heat, then add oil or butter. After that, most food lets go by itself.
Can I use metal utensils?
Yes. Spatulas, tongs and whisks are all fine.
Which heat sources does it work on?
Gas, electric, induction, ceramic and in the oven up to 260°C.
Is it dishwasher safe?
Yes. Often a quick rinse with warm water is all it needs.
How does the warranty work?
You get a 25 year warranty against manufacturing defects. If something's wrong, we'll replace your pan for free.
How heavy is it?
The 28 cm pan weighs about 1.1 kg. That's lighter than cast iron, so it's easy to handle.
Do I need to season it?
No. You can use it straight out of the box.
