Caring for your pan

Martin's tip: warm your pan over medium heat first, then add a little oil or butter. Titanium holds heat really well, so you'll rarely need high heat.

Wash it with warm soapy water, or just pop it in the dishwasher.

The problem

Your food deserves a better pan

Most pans are made to be replaced. That’s a waste of your time, your money and your good ingredients.

  • Worn out too soon1

    Worn out too soon

A nonstick coating wears down. High heat, the dishwasher and everyday cooking all take their toll. Then you're back at the shop.

  • Scratched within weeks2

    Scratched within weeks

One slip with a fork and the coating's damaged. And whatever flakes off isn't something you want in your food.

  • Hot in the middle, cold at the edge3

Hot in the middle, cold at the edge

Your steak browns in one spot and stays pale in another. You can taste the difference.

The Chez Martin difference

Crafted without compromise

Martin signed off on every detail. Everything he asks of a pan in his restaurant, this one delivers.

  1. No coating, nothing to flake off

You cook straight on titanium. There's no layer that can wear, scratch or peel. Made without PFAS and PTFE.

  2. Tough enough for metal tools

Go ahead and use your metal spatula or whisk. This pan can handle it.

  3. Restaurant level heat

Sear on the hob, then finish in the oven. Safe up to 260°C.

  4. Even heat, edge to edge

The core spreads heat right to the rim, so every piece gets the same golden crust.

I made this pan the way I’d want to use it myself. Without compromise.

  • Eggs actually slide

I was sceptical without a coating, but you warm it up, add a bit of butter and the omelette comes out in one piece. Three months in and it still looks new.

  • The last pan I’ll buy

We went through two nonstick pans in four years. This one handles the metal spatula, goes in the oven and comes out of the dishwasher looking the same. Heavier than I expected, in a good way.

  • Give it a week

It cooks differently from a coated pan, you really do need to warm it up first. Once I got that right my steaks got better than they have ever been. I should have bought the set straight away.

Cook like Martin

Four steps, straight from his kitchen

Titanium isn’t a coating, so it cooks a little differently. Follow Martin’s routine and your food lets go with ease.

  1. Warm it up

Give your pan two minutes over medium heat. Titanium spreads the warmth evenly, so you rarely need more.

  2. Add a little fat

Oil or butter goes in once the pan is warm. That's what helps your food release on its own.

  3. Leave it alone

Don't move your food too soon. Once the crust has formed, it lets go by itself.

  4. Clean up in a minute

Warm water and a soft sponge, or straight into the dishwasher. That's it.

Who is Martin Odeu?

A French chef with one Michelin star. With Chez Martin, he's bringing the tools from his kitchen into yours, at a price that works for home cooks.

How is this different from a nonstick pan?

A nonstick pan relies on a coating, and coatings wear out. Ours doesn't have one. You cook straight on titanium, so there's nothing to lose over time.

Is it safe to cook with?

There's no coating, so nothing can flake into your food. The pan is made without PFAS and PTFE.

Will food really not stick?

Titanium isn't a coating, so it takes a little technique. Martin's tip: preheat over medium heat, then add oil or butter. After that, most food lets go by itself.

Can I use metal utensils?

Yes. Spatulas, tongs and whisks are all fine.

Which heat sources does it work on?

Gas, electric, induction, ceramic and in the oven up to 260°C.

Is it dishwasher safe?

Yes. Often a quick rinse with warm water is all it needs.

How does the warranty work?

You get a 25 year warranty against manufacturing defects. If something's wrong, we'll replace your pan for free.

How heavy is it?

The 28 cm pan weighs about 1.1 kg. That's lighter than cast iron, so it's easy to handle.

Do I need to season it?

No. You can use it straight out of the box.
